One for the books....

I suppose I should have learned my lesson and given up on trying any new recipes for awhile.. But that wouldn't hide the fact that I am still sick of cooking the same 5 meals...

A few weeks ago my friend and I were chattin over hello (only the coolest IM program) and I was complaining of not knowing what to make for dinner.. At that time she shared one of her family favorites... And I knew I had to try it...So I quick jotted down the ingredients on a scrap piece of paper... Which of course, tonight (when I needed it) was NO WHERE to be found.. ODD.

Anyhoo, Rachel wasn't online when I got home...boohoo
So I emailed her, but started my rice and chicken cause I knew I needed those 2 things.. ROFL!! And if she were anything like ME... she'd be checkin her email at least a dozen more times before bedtime.. LOL!
And she did check her mail, and she saved dinner....(thanks chica!)

I hope this isn't a SECRET family recipe or anything, because I'm going to share it now.. And if it is.. well sorry future Young families....But it was just too yummy to NOT share.

I think she called it

Hawaiian Chicken:

2 cups cooked rice
cooked chicken (I used @ 9 boneless/skinless tenderloins)
2 Tbsp Soy Sauce
2 Tbsp brown sugar
1 can pineapples (save juice)

In sauce pan mix rice, chicken, sauce, sugar and pineapples). Then transfer over to oven safe dish all ingredients, pouring pineapple juice on top. Dot with butter and more brown sugar. Bake at 350* until heated through.

Delish.. Everyone but Jenna tried it and liked it. I WILL be making this one again. Might even become one of my famous top 5 meals... ROFL!

Nothing else to share tonight, just thought I'd post about this recipe. I'm just going through the motions of our bedtime routine.. I'm SO TIRED.. Today was loooooong.. But rather and surprisingly pleasant. It was an early morning since it's tumbling day. Early release day for boys, track after school for linney. The boys did get to play outside for a couple hours. Although it was cloudy and threatened rain, it never did and wasn't freezing cold, so they rode their scooters for a bit. We got home after 5pm. I was ready for bed right then. But I'm thinkin I can make it one more hour... LOL! I'm recording American Idol, so I've got something to look forward to after the kids are fast asleep. teeheehee

Looking forward to the weekend (not really) but at least I won't have to get up early on Saturday.. HAAAAAAAAA

Oh and I ordered some leg warmers for Jenna last night.. Some adorable skidpants and baby legs from this website my sister found.

I can't wait till they get here. I guess I better order some for lindsey now, so she doesn't cry that I'm playing favorites.. HAAAAAAA! However, Lindsey gets new shoes so she can't really complain.. OY!
Well, I'm off for now. Lars needs to do one more page in his homework packet and it's time to read.. Then idol and caramels for me! OW. my teeth are really starting to ache after all these chewy candies (<----not really complainin, just saying...) Have a great night! -J

i'm going to make Hawaiian Chicken for dinner today. Need to do something wilth that case of pineapple chunks I bought from Costco!

What a great recipe. I've been looking at ways to include a recipe book for scrapbookers that I might self publish. Do you know any other scrapbookers who have published their own books? What are the best printers to use? Should I use clp 300 toner or another brand/variety? I want the book to be nice enough that it will sell, but I am on a tight budget.
